6.25” Nitro-V Utility Slicer in “Bengal” G-Carta, Black and Green G10

The 6.25." satin finish blade is hand-ground from Nitro-V stainless steel. This is an enhanced version of AEB-L, a Scandinavian steel that was originally developed for razors. It is resistant to corrosion but unlike many stainless steels, it is also very easy to sharpen and maintain a keen edge, making this steel particularly well suited to kitchen knives. It has been heat-treated to approximately 62 Hrc by Paul Bos Heat Treating of Buck Knives.

The blade is a full flat grind and the edge is convex ground to 15 degrees per side (30 degrees inclusive). It has a mild trailing point profile, where the tip rises above the general axis of the blade. Combined with a generous belly, and thin .070” thick stock, this should make for a fierce, moderately flexible slicer that can also be taken to the board. The spine, choil and heel have been rounded for comfort.

The handle of this knife was made from G.L Hansen’s “Bengal” pattern G-Carta. This is a composite material made from layers of fabrics infused with epoxy which gets heated, pressurized and formed into blocks making for a visually striking and very tough handle.

Not recommended for the dishwasher; as with all quality knives this should be washed by hand and dried immediately.
