7.5” Nakiri in Nitro-V with Masur Birch/Box Elder Burl/micarta handle




A nakiri is a traditional Japanese vegetable knife (nakiri translates roughly to "knife for cutting greens"). As such, it is used primarily for chopping vegetables though it is perfectly suitable for slicing fish and boneless meats as well.
The 7.5" satin finish blade is hand-ground from Nitro-V stainless steel. This is an enhanced version of AEB-L, a Scandinavian steel that was originally developed for razors. It is highly resistant to corrosion but unlike many stainless steels, it is also very easy to sharpen and maintain a keen edge, making this steel particularly well suited to kitchen knives. It has been heat-treated to approximately 62 Hrc by Paul Bos Heat Treating of Buck Knives.
The blade is a full flat grind and the edge is convex ground to 15 degrees per side (30 degrees inclusive). The spine, choil and heel have been rounded for comfort.
The point of balance lies roughly around the maker’s mark.
The traditional style otacgaonal Wa-handle is made from stabilized Masur birch, dyed Box Elder burl, and black canvas micarta.
Not recommended for the dishwasher; as with all quality knives this should be washed by hand and dried immediately.
