4.75” AEB-L boning/utilty knife in Dyed Maple burl, Maroon Micarta




The 4.75" satin finish blade is hand-ground from AEB-L stainless steel, a Scandinavian steel that was originally developed for razors. It is resistant to corrosion but unlike many stainless steels it is also very easy to sharpen and maintain a keen edge, making this steel particularly well suited to kitchen knives. It has been heat treated to approximately 62 Hrc by Paul Bos of Buck Knives.
The blade is a full flat grind and the edge is convex ground to 15 degrees per side (30 degrees inclusive). The spine and choil have been rounded for comfort.
The handle of this knife was made from Raffir Noble, a composite material with metals (in this case, fine brass and bronze meshes) in resin; liners are black and white G10. Custom mosaic pin made from brass, stainless steel, and copper.
I would classify this knife as a small boning knife; very deft in the hand for agile meat removal/slicing but I could also envision this being used as a very elegant dinner/steak knife due to its shorter length. Either way, it’s sure to bring a smile to the most discerning protein lover’s face!
Not recommended for the dishwasher; as with all quality knives this should be washed by hand and dried immediately after use.
