8.5” Nitro-V Chef knife in Dyed Maple burl, Hunter Brown and Navy blue micarta

The 8.5" satin finish blade is hand-ground from Nitro-V stainless steel. This is an enhanced version of AEB-L, a Scandinavian steel that was originally developed for razors. It is highly resistant to corrosion but unlike many stainless steels, it is also very easy to sharpen and maintain a keen edge, making this steel particularly well suited to kitchen knives. It has been heat-treated to approximately 62 Hrc by Paul Bos Heat Treating of Buck Knives.

The blade is a full flat grind and the edge is convex ground to 15 degrees per side (30 degrees inclusive). The spine, choil and heel have been rounded for comfort.

Ground from .094” thick stock, this knife is thin enough to do everything a chef knife should without wearing you out or having to baby it.

The handle of this knife was made from dyed maple burl with brown and navy blue micarta liners.

Not recommended for the dishwasher; as with all quality knives, this should be washed by hand and dried immediately.
