6”410SS/26C Bunka knife in Spalted Curly Mango, Micarta and G10

The 6” satin finish blade is hand-ground from 410SS/26C San Mai steel. San Mai is a traditional, high-end Japanese blade-making technique in which a very hard steel blade core is clad with a single layer of “softer” stainless steel on each side of the core for support and protection against corrosion. NOTE: While the 410SS cladding is highly resistant to corrosion, the 26C core, as a carbon (or non-stainless) steel, will require more care: carbon steels will rust if left wet and should be thoroughly dried after each use. This knife has been etched with a coffee-base etchant which is somewhat protective and will change over time depending on use, though you can slow this process if desired by applying a food-grade oil or wax regularly. It has been heat treated to approximately 63-64 Hrc by Paul Bos Heat Treating of Buck Knives.

This blade is my interpretation of a Bunka knife, a general-purpose kitchen knife, similar to a Santoku. Like the Santoku, this has a somewhat taller blade than a utility/petty knife for added board clearance. However, the sharply angled tip allows more detailed cuts, particularly useful when cutting fish and meats. Landing somewhere between a petty and full-sized chef knife, this is a very handy knife for general kitchen work. The blade is a slight convex grind and the edge is ground to 15 degrees per side (30 degrees inclusive). The spine and choil have been rounded for comfort. 

The handle of this knife was made from dyed spalted curly mango wood. It is a modified traditional octagonal shape with shallow finger channels for comfort and grip. It has spacers made from burlap/linen micarta and G10. The wood has been professionally stabilized by K&G.

Not recommended for the dishwasher; as with all quality knives this should be washed by hand and dried immediately after use.
