5.75” CPM-Magnacut “Galley” utility knife in green SureTouch G-10

I designed this “Galley” knife with boating food prep in mind. In place of the usual descriptive blurb, I’m going Q and A style for this one:

Why the not-so pointy (i.e. sheepsfoot) blade?

Sheepsfoot blades are popular on boats because the rounded tip reduces the chance of accidentally stabbing things (i.e. fingers, sails, flotation bladders). Incidentally, the dropped point angle also makes for an effective rope cutter so you’ll often see this type of profile on rigging knives; while it is intended primarily as a food prep knife, I’ve ground this knife from slightly thicker stock than my usual kitchen utilities so in a pinch it could definitely handle some occasional rope/other miscellaneous light cutting duties.

What is SureTouch G-10?

This is a newer material by Norplex that combines layers of G-10 (glass fiber composite) laminated with layers of rubber. This makes for an extremely grippy, durable and low maintenance handle: very well suited to wet and potentially unstable environments, whether that’s because the boat is heeling or the skipper is shouty…

Why Kydex instead of wooden saya(scabboard)?

Wood is beautiful but generally is higher maintenance and less forgiving around water than synthetic materials. Kydex thermoplastic allows for a safe, durable, and virtually zero maintenance covering for the blade. Form-fitted and rigid, it makes for secure storage that doesn’t require a retention pin that may be harder to fuss with on a boat. The open construction means that when it needs to be cleaned, you can just flush it out with soap and water. If bits of sand/grit get in there requiring a deeper cleaning, you can just take out the screws and have at it.


Why use CPM-Magnacut steel?

Steels that offer high corrosion resistance tend to be softer, and therefore less able to hold a sharp edge, so this has historically been an area of compromise. A simple explanation for this has to do with the presence of carbon in steel. Normally, steels obtain a great deal of their cutting performance from a hardening agent in the form of carbon, which is one of the key reasons why high-carbon (or non-stainless) steel knives have regained popularity among chefs. The trade-off is that high-carbon steels will corrode without diligent maintenance, so stainless steel is usually preferable in wet environments. This works great for stainless steel boat fittings as they usually contain very little carbon and high amounts of chromium (contributing to corrosion resistance), but this isn’t the case for cutlery: stainless blades that have enough carbon to cut well will still rust under damp and salty conditions if you neglect to perform basic maintenance.

CPM-Magnacut steel, however, has successfully used a formula that balances the carbon and chromium content, resulting in a knife that at high hardness (63-64 hrc in this case) holds a keen, long-lasting edge while achieving extremely high levels of rust resistance.

Though ideal for general kitchen applications, this knife would be exceptionally happy spending its time in a boat galley, stowed in a mess kit, at a picnic, or in any environment that calls for a rough-and-tumble kitchen blade sporting the ultimate balance of corrosion resistance and performance.

(Still not recommended for the dishwasher; as with all quality knives this should be washed by hand to best preserve the edge and materials.)
